Our Story

Thobors Boulangerie Patisserie Café is owned by Marc Thobor. Marc is a Parisian-trained bread baker, who emigrated from France with his family several years ago. Pascal Ribreau, the renowned French chef of Toronto’s Célestin restaurant, asked Marc to bring his prodigious talent—and his wonderful bread recipes—to become the master baker at Le Comptoir de Célestin. Located in a tiny, charming annex next to Célestin, Le Comptoir soon became a destination on its own, with customers lined up to indulge in freshly baked baguettes, boules, and decadent slices of flourless chocolate cake. Early in 2008, Marc bought the bakery, renaming it Thobors Boulangerie Patisserie Café and moved it to larger premises just one door north.

Marc Thobor began baking when he was 16 simply because he loved bread and everything about it. After graduating from an accredited three-year artisanal bread-baking training and apprenticeship institute, Marc honed his craft at several traditional Parisian boulangeries. He believes that good bread happens only when fresh, natural ingredients of the highest quality are blended with an understanding of bread chemistry—and craft. But Marc says that the magic of the bread doesn’t happen until a knowledgeable and skilled pair of hands kneads it into a soft, silken mass, ready at precisely the right moment for the oven.

Ryosuke Kita is Thobor’s pastry chef. Originally from Japan, Ryosuke learned the art and science of French pastry making via the vibrant and competitive French restaurant scene in Tokyo and Osaka. Ryosuke marries his love for the delicious, decorate art of French pastry craft with his Japanese sensibility, bringing wonderful new interpretations to Thobors’ sweet selections.
